Italian Chicken

Home » Fit Blog » Italian Chicken

I prep my food for the week on Sundays, so I like meals that make multiple servings and are easy to make. I utilize my Crock-Pot or slow cooker almost every week. It is easy to use and the preparation does not take long. Here is a delicious recipe I found on Pinterest that I will definitely be making again. It makes about 6 servings.
Remember to buy organic and check labels on containers for questionable ingredients.

4 Organic boneless skinless chicken breasts
16-Ounce bottle of organic Italian dressing
1/2 Cup of parmesan cheese
4‒6 Organic potatoes scrubbed cut in half or wedges (you can peel if desired)
4‒6 Organic carrots (cut into four long pieces)

Sprinkle crock with olive oil.
Pour a small amount of Italian dressing at bottom of Crock-Pot.
Place two chicken breasts in crock.
Pour some of the Italian dressing on the chicken.
Sprinkle half of the cheese onto the chicken.
Sprinkle salt and pepper on chicken if desired.
Place next two chicken breasts into Crock-Pot, if possible not directly on top of the first breasts.
Sprinkle remaining cheese on top of chicken.
Pour carrots on top.
Pour more of the Italian dressing on top of chicken and carrots.
Place potatoes on top.
Pour the remaining Italian dressing on the potatoes.
Cook on low for 6‒8 hours.
