I love making soups and a friend of mine shared this recipe with me that is not only quick and easy, but delicious! The great thing about this soup is you can add whatever you want to make it your own. I will tell you how I made it and you can add anything else you think would be a great addition. Remember to buy organic ingredients and the amounts of each item can be altered to meet your needs.

1-1 ½ boxes of Organic Tortilla soup starter (sold at Sprouts)

1-2 cans of beans (black, pinto, kidney, etc.)

1 bag of frozen corn

1-2 bell peppers (I prefer red, yellow, or orange, but you can use green as well)

¼-½ cup of jalapenos

3-5 cloves of garlic

½ cup of cilantro

1 avocado

You will need to chop up bell pepper, jalapenos, garlic, and cilantro. Add all ingredients in to a large pot, except for cilantro and avocado, and cook on medium heat until veggies are tender. When it is done cooking, add cilantro. Pour into a bowl and cut half an avocado and place on top. If you want to add organic tortilla chips, you can break up a few and sprinkle on top. It will make at least 6 bowls of soup. Enjoy!
