My friend made me these cookies and I had to get the recipe. She was trying the Paleo diet and bought a book called, Paleo for Beginners, Essentials to Get Started. I’m not on a Paleo diet, but I am gluten free so it was perfect for me. Plus, I love sweets and I am always looking for healthy, delicious recipes that are free from preservatives and processed ingredients. I was surprised how yummy these are! I recommend using organic ingredients. Enjoy!

3 cups almond flour

1 teaspoon baking soda

2 large eggs

¼ cup pure maple syrup

1 teaspoon pure vanilla extract

½ cup coconut oil

1 cup bittersweet chocolate chips

Preheat oven to 375 degrees

Sift together the dry ingredients in medium mixing bowl. Beat in the eggs, maple syrup, vanilla, and coconut oil with a hand mixer until well combined. Fold in the chocolate chips.

On a parchment-lined baking sheet, drip tablespoon-sized balls of cookie dough about 2 inches apart. Bake for 15 minutes. Remove from oven, cool, and serve.

Makes 2 dozen.
